Easy Prune Pie Recipe: delicious!

While talking to a friend about the beautiful fruits that grow in her yard (I was admiring her fig tree) she gave me a ton of prunes she got from her friend’s yard.

It’s incredible what can grow in a garden. Those fruits along with food from the wild are not only delicious and sweet but one of the healthiest, easiest accessible and most seasonal food we can get!


With a full box of prunes going home, I decided to make a simple Pie out of them. I like easy recipes with healthy, seasonal ingredients.

Since prunes are in season right now, they are available for you on the farmer’s market or in your store. Look for organic whenever possible and the more local, the better.

Extra tip: make twice the amount, so you can enjoy an easy lunch, or dinner the next day! Do the work once(cooking, baking), enjoy the result several times!


The recipe I share is typical for the Swiss cuisine, similar to the ones found in famous Betty Bossy cook books and on helvetickitchen.com. I love to cook the Swiss way, it’s a way to keep my cultural heritage alive!

Still, the pie from my mom tastes better. But who can top your mom’s baking??

The recipe can be done with apricots or apples instead of prunes. Decide what tastes best for you and your loved ones. Everyone will love this pie, try it out:


Ingredients for 2 pies:


  • Prunes (or apricots, apples)

  • 2 Pie Crusts

  • Almond flour

  • Half half (milk and cream)

  • Sugar

  • 2 eggs





Steps:


1. Preheat oven to 400 degree Fahrenheit (200 degree Celsius)

2. Unroll the Pie crust, make tiny holes with a fork (picture)

3. Add 3 tablespoons of almond or hazelnut flour on each dough, spread it evenly

4. Fruits: pit the prunes, cut in quarter sized pieces

5. Arrange the fruits in circles on the pie



6. Mix 5 dl of half half (half milk and half cream) with 2 eggs and 5 tablespoon of sugar in a bowl.

7. Pour the mixture over the pie

Put them in the 400 degree Fahrenheit (200 degree Celsius) preheated oven for 45min.


Enjoy when still lukewarm!
