Fall recipes to fall in love with



· Spaghetti Squash with grass fed ground beef



Ingredients serves 4:

- 1 onion

- 1 package of grass fed ground beef (substitute with ground turkey or vegetarian version of ground beef)

- Raw red beet, or other vegetable cut in pieces

- 2 spaghetti Squash

Steps:

- Preheat oven to 360 Degree Fahrenheit

- In a frying pan turn on heat, add ground beef, fry it for 2-3min on high heat

- Reduce heat to medium

- Cut onion in pieces and add it to the beef, let it simmer for 5 min

- Cut spaghetti squash in half, lengthwise, remove all the seeds

- Fill the holes of the spaghetti squash with the ground beef (see picture)

- If you like add cubed red beet to the ground beef mixture

- Put the squash filled with beef in the oven and let it bake for 45min-50 min or until a fork enters smoothly into the squash.

· Green beans:

Green beans are sautéed in a touch and pair perfectly with any main dish. They are so easy to make, we should make them more often!

Ingredients:

-fresh green beans

-onion

Steps:

- Wash the beans, cut the ends

- Cut the onion into pieces

- Put ½ cup of water in a pan

- Add beans and onions and simmer over medium heat until tender but still crispy

- Season with a dash of salt and a bit of pepper if you like.

I like these beans because of the littel beans inside and they are healthy. ( Lenya)



· Fresh fall salad with escarole and oranges

Escarole salad is a bitter in taste. The oranges give some sweetness.


Ingredients:

- Escarole leaves

- 1 orange or 3 clementines

- Cilantro (coriander) or parsley

- Olive oil

- Salt

- Dash of lemon juice

Steps:

- Wash the salad leaves, dry them a bit

- Put 2 table spoon of olive oil, the juice of half a lemon and dash of slat in a bowl. Mix it

- Add the salad leaves

- Peel the oranges, cut the slices in tiny pieces

- Add them to the salad

- Wash cilantro leaves or parsley leaves or basil leaves

- Add them to the salad



Make them yummy!

Danke Lenya und Steffi, das sieht alles sehr lecker aus; ihr könnt schon bald ein Kochbuch herausgeben:-) Ich möchte gerne wieder einmal bei euch essen...!!!

Ich wusste gar nicht, was ein "spaghetti squash" ist - habe das jetzt herausgefunden!
