Healthy, quick meals from scratch

The meals I'd like to share with you today are done from scratch. Don't worry they are done in a short amount of time. What I like most about them is that you can add whatever vegetables you have at home or you like most.

Here the two recipes:


Hash browns from healthy potatoes with vegetables (Roesti for my Swiss people)


Fried rice with scrambled eggs and veggies



Hash browns from healthy potatoes with vegetables:


Ingredients:

- Raw or boiled mid-sized potatoes

- Fresh veggies, steamed veggies or leftovers from the day before

- Fresh herbs

- Eggs


Steps:

- Wash the raw potatoes 3 medium sized potatoes per person

- Grate potatoes

- Add butter or oil in a pan and heat

- Add grated potatoes in the pan,

- Roast for 10 min on one side

- Turn the potatoes around and roast for another 10 min until the side gets brown

- Remove it from pan, keep it warm (cover it on a plate with a lid)

- Put one egg per person in the pan, fry it until thoroughly heated

- Remove the fried egg from the pan and put it on top of the Hash browns

- Add your veggies or greed salad.


In my recipe I had steamed cauliflower left overs from the day before, so I added those with some fresh red chard and parsley and cilantro herbs.


Fried rice with egg and veggies


This recipes is not only super easy but my kids love it.

I used precooked rice from the previous day. Whenever I make rice I double the amount so I can make fried rice very quickly the next day!


Ingredients:

- Precooked rice

- One egg per person

- Vegetables cut in pieces or stripes like peppers, broccoli, carrots or whatever you have and is in season.


Steps:

- Organize all the ingredients. Set the table first, because it'll be done quickly.

- Heat butter or oil in a pan

- Add the precooked rice

- Add the eggs, mix everything

- Let it fry for 3 min

- Reduce to medium heat

- Add the ready veggies

- Mix it and fry for another 5 min over medium heat



I know that quick but healthy meals are important for us. It's my hope that you enjoy the recipes. My focus is to keep the healthy recipes as simple as possible. I only use the ingredients necessary. Feel free to experiment and make it your own by adding new flavors.
